Meet your favourite mushroom recipe! Here is a mushroom rice with capsicum for a healthy lunch. It is easy to make this and tasty too.

Ingredients
2 cups cooked basmati rice
6 mushrooms
½ red bell pepper
½ green bell pepper
½ yellow bell pepper
1 ½ tbsp celery
1 tbsp garlic
½ tsp black pepper powder
1 ½ tbsp coconut oil
Salt as required

Preparation
Heat oil in a pan and sauté celery and garlic.
Into it add the mushrooms and the three types of bell pepper.
Add salt as required.
Cook on low flame with the lid on.
Add the boiled rice and black pepper powder.
Mix well.
Garnish with some chopped celery.
