Lobster chilli roast

Lobsters have soft and flaky meat that amazingly absorbs the flavours from a spicy broth or gravy. This is an excellent side dish for white rice, chapathi or roti. Try out this simple recipe of lobster chilli roast for your next house party.

Ingredients
½ kg lobster
1 tsp ginger (crushed)
1 tsp garlic (crushed)
4 green chillies (crushed)
½ tsp turmeric powder
Salt as required
3 balls of Malabar tamarind
1 tbsp oil
1 tbsp ghee
10 - 12 Kashmiri chillies
1 ½ tbsp coriander seeds
¼ tsp mustard seeds
¼ tsp fenugreek seeds
¼ tsp cumin
1 tsp black pepper corns
8 cloves garlic
1 inch piece of ginger
Salt as required
Curry leaves as required

Preparation
Clean the lobsters
Cook it with crushed ginger, garlic, green chillies, turmeric powder, salt and Malabar tamarind and some water as well, for a few minutes
Heat oil and ghee and lightly fry the marinated and cooked lobsters. Keep them aside
In the same oil, roast the Kashmiri chillies, coriander seeds, mustard seeds, and fenugreek, cumin and black pepper corns
Powder this roasted spices in the small jar of a mixer
Now add ginger, garlic and some water into this masala powder and grind it into fine paste
Transfer this paste into a pan, add some water and allow it to boil
Add the fried lobsters and mix well
Cook until the water reduces and the lobsters gets coated with the masala
Garnish with fresh curry leaves.
