Put leftover rice to delicious use with this easy and simple recipe. Leftover rice vathal is a crispy Kerala-style snack and a perfect companion for your tea.

Ingredients
1 cup leftover rice
3 dried red chillies
2 tsp cumin seeds
1 onion
1 chopped green chillies
A sprig of curry leaves
Salt as needed
Oil as needed

Preparation
Soak the leftover rice in water overnight
Squeeze the water from the rice and add into a grinder along with dried red chillies and cumin seeds
Grind coarsely
Transfer the mix into a bowl, add chopped onion, green chillies, curry leaves and a pinch of salt
Combine well
Roll into tiny balls and place them on an oil paper or cloth
Let it dry in the sunlight for 2 to 3 days
Once it is completely dried and crispy, store in an airtight container
For frying, heat the oil and add a few vathals at a time
Wait till they puff up and turn golden brown.
