Palakkad-style pulikuthi

Pulikuthi made with raw plantains is a delicious dish that is commonly cooked in Palakkad. Those who have tried this wholesome dish say that one could finish plates full of rice with just some pulikuthi on the side. Here is how you can prepare the pulikuthi.

Ingredients
2 raw plantains
1 tsp raw rice/ponni rice
½ tsp split chickpeas
½ tsp toor dal
5€“6 fenugreek seeds
¼ tsp asafetida powder
1 tsp urad dal
5€“6 red chillies
2 sprigs curry leaves
½ tsp mustard seeds
Tamarind water (taken from a lemon sized ball of tamarind)
Small piece jaggery
½ tsp turmeric powder
¼ tsp chili powder
3 tsp coconut oil
Salt as required

Preparation
Dry roast the raw rice/ponni rice, split chickpeas, toor dal, fenugreek seeds, asafetida, urad dal, red chillies and curry leaves until they are brown
Grind the roasted mixture into fine powder
Heat coconut oil in a pan and splutter mustard seeds
Add 1 tsp urad dal, red chillies and some curry leaves
Sauté well
Into it add the plantain pieces and mix well
Now add turmeric powder, chilli powder, tamarind water, jaggery and water as required
Cook until the plantains are almost done
Add 3 tsp of the previously prepared masala powder
Give everything a good mix
Cook for two more minutes.
