Gujarati dhokla and coriander chutney

Dhokla is an iconic Gujarati dish that is super soft and delicious. It is usually enjoyed with spicy coriander chutney. Here is how you could prepare dhokla at home.

Ingredients
For the dhokla
1 cup semolina
½ cup yoghurt
1 small piece ginger
3 cloves garlic
2 green chillies
¼ tsp turmeric powder
¾ tsp eno
Mustard seeds
White sesame
Curry leaves
Coriander leaves
1 ½ tbsp grated coconut
Salt
Sugar
Water
Oil
Juice of half lemon
For the coriander chutney
Palm full of coriander leaves
Palm full of grated coconut
1 green chilli
2 cloves garlic
A pinch of cumin
1 tbsp yoghurt
Salt as required
Water as required

Preparation
Mix the semolina with ginger, garlic and green chilli paste and turmeric powder, salt and yoghurt
Pour ½ cup water and mix into batter without any lumps
Keep the batter aside for at least 20 minutes
Add the eno and mix
Pour the batter into a greased vessel or tin
Cook in steam for 10-15 minutes on medium flame
Take the dhokla out of the vessel after it cools down
Heat oil and splutter some mustard seeds
Sauté green chillies and curry leaves
Add the white sesame seeds and sauté
Into it add water, salt and lemon juice
Boil well
Pour this syrup over the cool dhokla
Garnish with grated coconut and chopped coriander leaves
Cut into desired shapes
To prepare the coriander chutney grind coriander leaves, coconut, green chilies, ginger, garlic, cumin, salt and yoghurt (or lemon juice)
Enjoy the dhokla with coriander chutney.
