Chammanthi pothichoru by Lekshmi Nair

Pochichoru or Kerala-style lunch packed in plantain leaf is something that excites nostalgia for many. In her latest vlog, culinary expert Lakshmi Nair prepares the perfect pothichoru with few but delicious dishes.

Spicy coconut and shallots chutney and omelet are the usual dishes in a classic pothichoru. Interestingly, this delicious lunch packet can be prepared using any variety of rice. Check out how Lakshmi prepares and assembles the delicious pothichoru.

Ingredients
2 cup ponni rice (boiled)
For the chutney
2 cups grated coconut
5 shallots
4 green chillies
Gooseberry sized ball of tamarind
3 tsp chili powder
Salt as required
Curry leaves as required
1 small piece ginger (if required)

Preparation
Grind all these ingredients with some water
Add the chilli powder as the last step and grind again.
Prepare omelet using eggs beaten with shallots, green chillies, and salt as required
Take boiled rice in a bowl
Add the chutney and salt 
Mix well
Heat coconut oil and splutter mustard seeds
Sauté dried chillies and curry leaves
Mix this tempering into the rice and chutney mix
To assemble the pothichoru, run the plantain leaf above flame
Sprinkle some water mixed with salt on the leaf. This steps help in keeping the rice fresh for hours
Spread the rice and chutney mix on the plantain leaf
Fold the omelet and keep it above the rice
Fold this into a secured packet.
