Nadan chicken fry

Fried chicken is a classic dish that is often the star at every thattukadas or wayside eateries in Kerala. Check out this easy recipe of Kerala-style chicken fry with a twist. 

Ingredients
2 chicken drumsticks
1 tsp salt
¼ tsp turmeric powder
8 garlic cloves
1 small ginger 
1½ tsp fennel
1½ tsp pepper
3 cardamom pods
1 tsp salt
Shallots/onion
1 sprig curry leaves
1½ tsp chilli powder
2½ tsp chicken masala
¼ tsp pepper powder
1 tsp fennel powder
1 tbsp rice flour

Preparation
Rub some salt and turmeric powder on cleaned chicken drumsticks
Pressure cook these chicken pieces until two whistles on medium flame
Open the cooker only after the pressure has been released completely
Allow the cooked chicken pieces to cool down
Grind the garlic, ginger, fennel, pepper, cardamom, salt, onion/shallots and curry leaves into thick paste by adding 2 tbsp water
Add chilli powder, chicken masala, pepper powder, fennel powder, rice flour and some coconut oil into this masala paste
Mix well to make the flavoursome marinade
Marinate the chicken with this paste 
Keep these in the fridge for at least half an hour
Heat oil in a pan and roast curry leaves and fennel seeds
Add the marinated chicken into the pan
Cook for 3 minutes on medium flame with the lid on
Flip the chicken pieces and cook for another 3 minutes
When the chicken pieces are nicely cooked and crispy on the outside, increase the flame 
Take out the chicken after a few seconds
Squeeze some lemon juice above the fried chicken
Garnish with onion slices and keep it covered for 10 minutes
Enjoy the tasty fried chicken.
