Potato podimas

Potato podimas is a tasty dish that could be paired with chapathi, poori or roti. Here is how you could easily make potato podimas.

2 medium sized potatoes
1 ½ onion (finely chopped)
3 green chillies (finely chopped)
1 small piece ginger (finely chopped)
Palm full of coriander leaves
¼ tsp turmeric powder
1 ½ tsp chilli powder
1 tsp coriander powder
2 tbsp coconut oil
½ tsp mustard seeds
3 dried chillies
½ tsp fennel seeds
2 sprigs curry leaves
Salt as required

Boil and mash the potatoes
Heat coconut oil in a pan and splutter mustard seeds
Roast dried chillies, curry leaves and fennel seeds
Now add the finely chopped onion, green chillies and ginger
Sauté until they turn brown in colour
Add salt as required
Into it add turmeric powder, chilli powder and coriander powder
Add the mashed potatoes when the raw smell of the powders is gone
Garnish with chopped coriander leaves
Taste for seasoning
Delicious potato podimas is ready!
