Dragon chicken

Dragon chicken is a popular dish in restaurants and is quite easy to prepare perfectly at home as well. Check out the recipe. 

Ingredients
For the marinade
250 gm boneless chicken (sliced)
½ tsp salt
½ tsp pepper chicken
½ tsp soy sauce
For the batter
¼ tsp salt
3 tbsp all-purpose flour
2 tsp corn flour
½ tsp baking soda
1 tsp pepper powder
1 egg
4 tbsp cold water (from the fridge)
For the gravy
2 tbsp sunflower oil
20 cashews
2 tbsp tomato ketchup
2 tbsp red chilli sauce
2 tsp soy sauce
1 bulb garlic (finely chopped)
1 onion (sliced)
10 pieces of bell pepper (sliced)
4 dried chillies
1 tsp sugar
4 tbsp water

Preparation
Marinate the chicken pieces with salt, pepper, and soy sauce
Keep them aside for at least 20 minutes
Prepare the batter by mixing salt, all-purpose flour, corn flour, baking soda, pepper powder, egg and cold water
Add the marinated chicken pieces into this batter and coat them well
After half an hour, fry the batter coated chicken pieces in hot oil
Keep them aside to be used later
Fry the cashews and keep aside
Heat oil in a pan and sauté the garlic
Add the dried chillies when the garlic is almost done
Add the onions and sauté well
When the onions turn soft and translucent, add the bell peppers
Sauté on high flame
Now add the tomato ketchup, red chilli sauce, soy sauce, dried chillies, sugar and water
Mix well and allow the gravy to boil 
Taste for seasoning
Finally add the fried chicken pieces
Mix well until the chicken pieces are nicely covered in gravy
Garnish with fried cashews
Enjoy the dragon chicken with roti, chapathi, or naan.
