Soft and sweet rasgulla

Rasgulla is a popular Indian dessert that is enjoyed during the time of festivities. It is easy to prepare sweet and fluffy rasgulla in sugar syrup at home. Here is the fairly simple recipe of rasgulla.

Ingredients
2 litres milk
¼ cup lemon juice/vinegar
1 ½ cups sugar
4 cups of water
6 crushed cardamoms

Preparation
Boil the milk in a thick bottomed vessel
Keep stirring while the milk boils
Turn off the flame just before the milk begins to bubble up
Add teaspoons of lemon juice or vinegar until the milk curdles
Spread a piece of cotton cloth on a sieve
Pour the curdled milk into this sieve
Keep pouring cold water as well 
Now squeeze the cotton cloth to remove excess water from the curdled milk
Keep it aside for at least an hour for the water to be drained completely
Transfer the curdled milk into a vessel
Give it a good mix using your palms
Make 20 small balls from this mixture
Prepare the sugar syrup by boiling sugar, water and crushed cardamom in a big vessel
Put the curdled milk balls when the sugar syrup boils rapidly
Cook for 15-20 minutes with the lid on
Garnish the rasgullas with strips of saffron or nuts
 Serve the rasgullas along with some sugar syrup as well.
