Healthy palak ghee roast

Palak ghee roast is packed with nutrients and is a filling dish. Here is the very easy recipe of palak ghee roast.

2 cups raw rice/idli rice/ponni rice
½ cup urad dal
1 tsp fenugreek seeds
2 tbsp white flattened rice / boiled rice
¾ - 1 cup cold water
½ - ¾ cup water
Salt as required
2 palm full of palak (you could also add carrot, millet or moringa leaves)

Wash the urad dal and fenugreek seeds until the water runs clear
Now soak them for at least 3 hours
Soak the rice for 4 - 6 hours
Wash and soak the flattened rice too
Grind the urad dal and fenugreek by adding cold water (it prevents the heating up of batter while grinding)
Grind the flattened rice and the soaked rice too
Mix all the batters and add salt
Stir and mix for at least 5 minutes
Now keep this batter aside for at least 5-8 hours for it to rise
Wash the palak and cook it by immersing in boiling water
Do not overcook the palak as its nutrients would be lost
Grind the palak along with the cooking water into a smooth paste
Add this into the batter and mix well
Heat a Tawa and sprinkle some water on it
Pour a ladle full of batter and spread into thin dosa
Sprinkle ghee when the dosa becomes crispy
Fold and take the ghee roast off the Tawa
Serve palak ghee roast with coconut chutney or spicy sambar.
