Ingredients
2 ¼ cups wheat flour
½ cup flattened rice
1 cup grated coconut
1 tsp yeast
Sugar as required
Salt as required
Water as required
Preparation
Wash the drain the flattened rice
Into a mixer jar add the wheat flour, flattened rice, grated coconut, yeast, salt, sugar and water as required
Blend well
Transfer the batter into a bowl
Keep the batter aside for at least 8 hours for it to rise
After 8 hours, mix well
Heat an appam chatty and pour 2 ladles of batter
Rotate the chatty to spread the batter; keep the flame high
When holes begin to appear on the edges, lower the flame and cover the lid
Open the lid after some time to check whether the appam is cooked alright
The perfectly cooked appam would easily separate from the pan
Serve hot vellayappam with vegetarian or non vegetarian stews.
