Jackfruit payasam

This tasty payasam is made with ripe jackfruit bulbs and sago pearls. Here is how to make it.

Ingredients
30 jackfruit bulbs
100 gms sago pearls
1 coconut (grated)
1 cup jaggery syrup (thick)
4 crushed cardamom pods
2 tbsp ghee
3 tsp finely chopped jackfruit
20 raisins
1 cup first extract of coconut milk
2 cups each of second and third extract of coconut milk

Preparation
Pressure cook the sago pearls in 1 cup water until 3 whistles
Cut the jackfruit bulbs into small pieces and blend them in a mixer jar
In a thick bottomed vessel, cook the blended jackfruit with the second and third extracts of coconut milk
Add the cooked sago pearls when the mixture boils well
Add the jaggery syrup when the payasam bubbles up
Mix well
Now add the first extract of coconut milk
Allow the payasam to boil well before adding the cardamom powder
Add a pinch of salt too
Stir and mix well until the payasam thickens up
Take it off the flame when the payasam is cooked well and turns aromatic
Heat ghee in a pan
Fry the finely chopped jackfruit and raisins
Add these into the payasam
Delicious jackfruit pradhaman is ready.
