Sadya special koottu curry

Koottu curry is a delicious vegetable dish that is served for the traditional sadya (feast). Here’s how to make this dish easily at home.

Ingredients
Yam
Bengal gram (soaked for at least 4 hours)
Soy chunks
Ginger
Green chillies
1 cup grinded coconut and green chillies mixture
Grated coconut
Salt as required
Mustard seeds
Pepper powder
Garam masala
Turmeric powder
Chilli powder
Dried chillies
Curry leaves
Shallots
Oil as required

Preparation
Take Bengal gram, turmeric powder and salt in a pressure cook
Cook well and keep aside
Meanwhile, cook the yam with turmeric powder, salt, ginger, green chilies and curry leaves in another vessel
Into it add the soy chunks that have been soaked in hot water
Now add the cooked Bengal gram and coconut - green chillies mixture
Mix well
Heat oil in a pan and splutter mustard seeds
Sauté dried chillies, curry leaves and shallots
Into it add grated coconut
Roast until the coconut turns brown in colour
Now add chilli powder, turmeric powder, pepper powder and meat masala
Add this masala mix into the cooked vegetables
Give everything a good mix
Serve the delicious kootu curry for the sadya or enjoy with rice.
