Karkidakam special: Spinach-lentil curry

Lots of leafy vegetables should be included in the diet, especially during the month of Karkidakam. Check out the pretty simple recipe of spinach and lentil curry that could be enjoyed with rice or chapathi.

Ingredients
½ bundle spinach
3 garlic cloves
10 shallots
1 green chilli
½ tsp turmeric powder
¼ cup dal
1 tomato
Gooseberry sized ball of tamarind
Coconut as required
Salt as required
For the tempering
½ tsp mustard seeds
1 tsp raw rice
3 dried chillies

Preparation
Boil the dal well
Heat coconut oil in a pan
Add garlic, shallots, green chilli and tomato
Sauté well
Into it add the tamarind
Add the cooked dal too
Mix well
Allow this mixture to boil
Now add the spinach
Cook for some time and turn off the flame
Heat coconut oil and splutter mustard seeds
Roast the raw rice and dried chillies
Add this tempering into the curry
Mix well
Delicious spinach - dal curry is ready.
