Easy-to-make duck curry

This fragrant and delicious curry made using locally grown duck tastes amazing with appam and idiyappam. Check out the recipe.

Ingredients
1 duck
2 potatoes
4 onions
10 green chilies
3 sprigs curry leaves
2 tbsp crushed ginger – garlic
3 tbsp coriander powder
2 tbsp pepper powder
1 tsp garam masala
Cinnamon, cloves, cardamom pods, bay leaves, fennel seeds
1 cup first extract of coconut milk
2 cups second extract of coconut milk
Salt as required
Turmeric powder as required

Preparation
Rub some salt, turmeric powder and garam masala on cleaned duck meat
Pressure the marinated duck until three whistles
Heat oil in a pan
Add the whole spices
Roast them until the spices turn fragrant
Add crushed ginger and garlic
Sauté until the raw smell is gone
Into it add turmeric powder, salt and potato pieces
Mix and stir until the potatoes are partially cooked
Now add the onion and green chilies
Add some curry leaves too
Sauté well
Add coriander powder and sauté for some more time
Add pepper powder
Add cooked duck meat
Mix well until the water reduces from the meat
Pour the second extract of coconut milk
Close the lid and cook until the gravy thickens up
Add garam masala
Add the first extract of coconut milk
Lower the flame and cook for a few minutes
Do not let the gravy boil after adding the first extract of coconut milk.
