Check out the easy recipe of melt in the mouth panjiyappam that can enjoyed as an evening snack.

Ingredients
1 cup all purpose flour
1 egg
6 tsp sugar
½ cup coconut milk
¼ tsp yeast
A pinch of salt

Preparation
Beat the egg with sugar, coconut milk and yeast
Add this into the all purpose flour
Mix without any lumps
Keep the batter aside for at least 2 hours for it to rise
Heat oil in unniyappam pan
Pour batter into the holes
Close the lid and cook for 3 minutes on low flame
After 3 minutes, flip and cook for 2 more minutes
Soft panjiyappam is ready.
