Green chicken curry

Thick and rich green chicken curry could be enjoyed with rice, porotta, chapathi and puttu too. Check out the fairly simple recipe of delicious green chicken curry.

Ingredients
750 gms chicken
2 onions (chopped)
7 garlic cloves
1 small piece ginger
8 green chilies
Juice of half lemon
15 cashews
1 tbsp kasuri methi or dried fenugreek leaves
1 tbsp fennel seeds
2 cinnamon sticks
4 cloves
6 cardamom pods
1 ½ coriander powder
¼ tbsp pepper powder
1 tbsp yogurt
1 cup coriander leaves
1 cup mint leaves

Preparation
Heat 2 tbsp oil in a pan
Sauté onion, ginger, garlic and green chilies with ¼ tbsp salt
Add fennel seeds, cinnamon, cloves and cardamom pods
When the spices turn fragrant add coriander powder, pepper powder and cashews
Mix well
After this mixture has cooled down, transfer into a mixer jar
Into it add 1 tbsp yoghurt, lemon juice, coriander leaves, mint leaves and ¼ cup water
Grind well into smooth paste
Heat 2 tbsp oil in a pan
Into it add kasuri methi
Now add the masala paste too
Mix well
Into it add the chicken pieces
Cook for 5 minutes; mix and stir occasionally
Pour enough hot water to loosen the gravy a bit
Cook for 10 more minutes with the lid on
Turn off the flame the gravy begins to thicken up
Green chicken curry tastes best when served hot.
