Kerala style beef pickle

Tasty and spicy beef pickle could be easily prepared at home using simple ingredients. This pickle tastes amazing with rice and chapathi too. Check out the recipe.

Ingredients
1 kg beef
1 tsp turmeric powder
2 tbsp Kashmiri chili powder
½ tsp garam masala
1 tsp pepper powder
1 tsp coriander powder
Salt as required
Palm full of curry leaves
1 ½ cups oil (vegetable oil + sesame oil)
1 tbsp mustard seeds
5 – 6 dried chilies
1 tsp fenugreek powder
1 tsp asafetida powder
200 gms garlic (sliced)
100 gms ginger (sliced)
10 green chilies
Salt as required
1 cup curry leaves
1 cup vinegar
3 ¼ cups hot water
1 tsp turmeric powder
2 tbsp Kashmiri chili powder
2 tbsp regular chili powder

Preparation
Marinate the beef with turmeric powder, Kashmiri chili powder, garam masala, pepper powder, coriander powder, and salt and curry leaves
Cook the marinated beef pieces (do not overcook)
Reduce the water, in case there is stock
Heat oil in a pan and lightly fry these beef pieces
Set it aside
In the same oil fry green chilies, garlic, ginger and curry leaves
Pass this oil through a sieve to remove the burned bits
Now add some sesame oil into it
Heat this oil and splutter mustard seeds
Roast the dry chilies and turn off the flame
Meanwhile, mix 1 tsp turmeric powder, 2 tbsp Kashmiri chili powder and 2 tbsp regular chili powder into a paste by adding some water
Add this paste into the oil and turn on the flame
When the powders turn fragrant add the fenugreek powder and asafetida powder
Pour 1 cup vinegar
Allow the gravy to boil
Now pour 3 ¼ cups hot water too
Boil for some time
Add the fried beef, green chilies, garlic, ginger and curry leaves
Cook everything for 10 more minutes
Store in air tight containers after the beef pickle has cooled down
