Thalassery special chicken kalmas

Kalmas is a tasty snack that could be easily made using regular pathiri powder. Check out the recipe.

Ingredients
2 cups pathiri/appam powder
½ coconut (grated)
10 shallots
1 tbsp fennel seeds
2 ½ cups hot water
Salt as required
For the filling
300 gms boneless chicken
2 onions
1 tbsp ginger (finely chopped)
1 tbsp garlic (finely chopped)
2 green chilies
1 sprig curry leaves
Palm full of coriander leaves
3 tbsp coconut oil
½ tsp turmeric powder
1 tbsp chili powder
½ tsp garam masala
½ tsp pepper powder
½ tsp coriander powder
Salt as required
2 tbsp water

Preparation
Cook the chicken by adding the masala
Shred the cooked chicken pieces; set it aside to be used later
Mix the pathiri/appam powder in the consistency of idiyappam dough
Heat coconut oil in a pan
Sauté onion, ginger, garlic, green chilies, curry leaves and coriander leaves
Into it add turmeric powder, chili powder, garam masala, pepper powder and coriander powder
Sauté until the raw smell of powders are gone
Add the shredded chicken
Mix well
Keep this filling inside a ball of dough
Roll this into the size of pathiri
Cook the kalmas in steam
After the kalmas has cooled down, rub some masala powder on them
Now deep fry in hot oil until the outsides turn brown in colour
Tasty chicken kalmas is ready.
