Thiruvathira is a unique festival celebrating feminine grace. Payasam or porridge made using arrowroot powder is usually had for breakfast on the day of Thiruvathira. Loaded with nutrients, arrowroot powder is excellent for expecting mothers and babies. Koova payasam is a nutritious dish that is extremely light on the stomach. Ingredients
½ cup arrowroot powder
150 gms jaggery
3 cups water
½ tsp cardamom powder
½ tsp dried ginger powder
¾ cup grated coconut

Preparation
Melt the jaggery by boiling it in 1 cup of water
In a thick bottomed vessel, mix arrowroot powder, jaggery syrup, cardamom powder, dried ginger powder, ghee and 2 cups water
Stir continuously on medium flame
Add grated coconut when the payasam thickens up
Stir until everything mixes well and has a thicker consistency
Delicious arrowroot payasam is ready!
