Try this special masala chicken curry if you are tired of the coconut milk or roasted coconut gravy. Masala chicken curry tastes best with appam, porotta and rice too.

Ingredients
1 kg chicken
½ tsp turmeric powder
2 tsp Kashmiri chilli powder
3 tsp coriander powder
3 tsp chicken masala powder
2 big onions
2 green chillies
1-inch piece of ginger
4 -5 garlic cloves
1 tomato
2 -3 sprigs curry leaves
6 - 7 tbsp coconut oil
Salt as required
1 ½ - 2 cups water

Preparation
Cut the chicken into small pieces
Marinate the cleaned chicken with ¼ tsp turmeric powder, 1 tsp Kashmiri chilli powder and salt
Keep them aside for at least half an hour
Mix the coriander powder and chicken masala powder in ¼ cup water
Heat 2 tbsp coconut oil in a pan
Add the marinated chicken and fry for 5-6 minutes
Set them aside to be used later
Add some more oil in the same pan
Sauté the onion until golden in colour
Add ¼th of the sautéed onions in the soaked masala mix
Grind into smooth paste
Add crushed ginger and garlic and split green chillies
Sauté until the raw smell is gone
Into it add turmeric powder, Kashmiri chilli powder, curry leaves and grounded masala paste
When this mix is nicely sautéed, add the tomato
Sauté well
Add water and salt
When the gravy begins to boil add the fried chicken
Mix well
Heat coconut oil and splutter mustard seeds
Roast curry leaves and green chillies
Add this tempering into the chicken curry
Give a good mix
Delicious masala chicken curry is ready.
