This delicious chicken curry is the perfect combination with chapathi, porotta and rice. A dish originated from Coimbatore in Tamil Nadu, chicken chinthamani is worth a try.
300 gms chicken
Coconut oil/sesame oil
1 small piece ginger
Garlic if required
Remove the seeds of the red chillies
Soak the red chillies in water for a while before grinding
Heat 3-4 tsp sesame oil in a pan or earthen vessel
Sauté the ginger and garlic
Sauté the shallots too
Now add the red chillies or paste
You could also add Kashmiri chilli powder
Add salt and the chicken pieces
Mix and cook well
Do not add water
Garnish with curry leaves.
