Pink Kashmiri tea

Keralites are known for their love for the classic milk tea. If you are interested in trying unique varieties of tea, check out the recipe of tasty and fragrant Kashmiri tea that can be prepared using ingredients that are easily available in our pantries. The attractive pink colour is this tea’s highlight.

Ingredients
2 ½ cups water
2 cardamom pods
2 cloves
1 small piece cinnamon
3 green tea bags
A pinch of baking soda
1 cup cold water
2 cups milk
Sugar as required
Almonds and pistachios to garnish

Preparation
Take out the green tea from the tea bag
Boil green tea, cardamom pods, cloves, cinnamon and baking soda in 2 ½ cups water
Reduce it to half
Into it add ice cold water
Boil until it reduces again
Meanwhile, use a ladle to aerate (scoop and pour back) the tea
Turn off the flame when the tea gets reduced to almost a cup
Pull the tea (pouring back and forth briskly) so that it forms a frothy head
Now the tea must be dark red in colour
Strain this liquid into milk
Add sugar and boil again
Now the tea would turn pink
Pour into cups and garnish with chopped almonds and pistachios
Refreshing pink Kashmiri tea is ready.
