Check out the pretty simple recipe of yam masala curry that tastes exactly like your favourite meat curry. This curry tastes amazing with rice, chapathi or roti.

Ingredients
2 cups squared yam pieces
1 tomato
½ tsp turmeric powder
1 cup grated coconut
3 dried chillies
4 garlic cloves
1 tsp fennel seeds
½ tbsp coriander seeds
1 tsp peppercorns
1 tsp jaggery
2 tbsp coconut oil
1 tsp mustard seeds
5 shallots
2 sprigs curry leaves
2 dried chillies
¼ tsp asafoetida powder

Preparation
Cook the yam pieces with tomato, turmeric powder, salt and some water
You could also pressure cook the yam until one whistle
Dry roast grated coconut, dried chillies, garlic, ginger, fennel seeds, coriander seeds and peppercorns on low flame for 5 minutes
Make sure that the colour of the coconut does not change
After this mixture has cooled down, grind into fine paste by adding enough water
Into the cooked yam add the masala paste and jaggery
Mix well
Mash a few pieces of cooked yam pieces if you want the gravy to be thicker
Turn off the flame when the gravy boils
Heat coconut oil and splutter mustard seeds
Sauté shallots, curry leaves and dried chillies
Turn off the flame before adding the asafoetida powder
Mix well
Add this tempering into the curry
Give everything a good mix
