Orappam: A traditional Kerala snack to enjoy this Onam season

If in the mood for something new for this Onam, go back in time and prepare this nostalgic snack. Here's the simple recipe!

Ingredients
1 cup rice flour
2 cups second extract of coconut milk
½ cup first extract of coconut milk
1 egg
2 tsp ghee
1 cup melted jaggery
Pinch of salt
¼ tsp nutmeg powder
¼ tsp cardamom powder
1 tbsp cashews
2 pinch caraway seeds

Preparation
Pour the second extract of coconut milk into the rice flour and mix without forming any lumps
Heat the first extract of coconut milk in a thick-bottomed pan
Allow it to boil until the oil begins to separate
Beat the egg by adding ghee, melted jaggery, and salt
Add this to the rice flour-coconut milk mixture (batter)
Heat this mixture on simmer and stir continuously
When it begins to thicken, add the boiled first extract of coconut milk and mix well
Into it, add the nutmeg powder and cardamom powder
Mix everything well until it has a sticky and gooey consistency
Now add the caraway seeds and cashews
Mix well and take it off the heat
Transfer this orappam mix into a greased cake tin and level the top using a spoon
Place a few cashews on top of it
Bake for half an hour in a preheated oven at 160°C

Cut into the desired shape and serve.
