Caramel semiya payasam: A mouth-watering twist on the much-loved dessert

Do you love semiya aka vermicelli payasam? In this holiday season, try giving the popular dessert a caramelized twist to enjoy a variety dessert. Rich with cashew nuts, raisins, bananas, milk, butter and more, the mere thought of this payasam can tempt you to make it for the whole family. Here's the recipe:

Ingredients
2 tablespoons ghee
100 gm vermicelli (semiya)
2 tablespoons cashew nuts
2 tablespoon raisins
1 plantain banana (nenthrapazham)
1 ½ cup of sugar
1 litre of milk
2 tablespoons butter

Preparation
Heat one tablespoon of ghee in a pan
Slightly roast the vermicelli, remove it from the pan
In the same pan, add one tablespoon of ghee and roast the cashew nuts slightly
Add raisins and banana (chopped into small pieces) along with it
Sauté the mix slightly for some time
When it is almost cooked, sprinkle some sugar over it
Put the pan aside and place a cooker on the stove
Add one-and-a-half cups of sugar to it, put the flame to simmer mode
Stir the sugar to caramelize it lightly, but be careful not to burn it
Once the sugar is completely caramelized, add two tablespoons of butter to it
Stir it well
Add one litre of milk and stir it thoroughly to avoid lumps
The lumps will be removed soon
When the milk is boiled well, add the fried vermicelli
After that, close the cooker and cook it for 15 minutes in a low flame
After opening the cooker, add the roasted cashews, raisins, and banana to it
The tasty caramel payasam is ready to be served now.
