Green gram dosa: Healthy, easy and vegan-friendly

Say dosa and you can easily name at least 10 varieties of it, especially at a time when social media's cooking experts are dishing out new varieties every day. But have you heard of pesarattu, a 'green' dosa native to the Andhra region? Made with split green gram, 'pesarattu' aka green gram dosa is filled with protein, dietary fibre and antioxidants like flavanoids and what's more, it's completely vegan. Here's the recipe

Ingredients
1 cup split green gram
½ cup raw rice
3 red chillies
½ cup grated coconut
½ cup onion
2 green chillies
1-inch size ginger
½ teaspoon cumin seeds
Salt to taste
Curry leaves

Preparation
Soak split green gram, raw rice and red chillies for two hours after cleaning them thoroughly
Later, grind them to a coarse consistency along with salt
Add coconut, onion, green chillies, ginger and cumin seeds to the batter after crushing each of these items
Heat a dosa pan and spread the batter
Sprinkle oil or ghee over it
Roast the dosa by covering the pan with a lid
The crispy green gram dosa could be served with chutney, sambar or pickles
