Egg-beetroot thoran

Beetroot is one of the least popular vegetables as most people do not like eating them. However, beetroot is a highly nutritious ingredient that should be included in your regular diet. Egg-beetroot thoran or stir fry would be a delicious side with rice. It is very easy to make and requires few ingredients. Check out the recipe of beetroot-egg thoran.

Ingredients

1 beetroot
2 eggs
1 onion
3 green chillies
2 tbsp grated coconut
Salt as required
Curry leaves
¼ tsp mustard seeds
1 tsp urad dal
2 dried chillies
2 tbsp + 1 tsp coconut oil
¼ tsp turmeric powder

Preparation

Heat coconut oil in a pan and sauté the finely chopped onion, green chillies and turmeric powder
Into it add the grated beetroot and cook for 5 minutes on low flame
Add salt as required
Make some space in the middle and crack open the eggs into it
Mix the beetroot and eggs well
Now add the grated coconut as well
Mix and cook well
Meanwhile, heat a teaspoon of coconut oil in another pan
Splutter mustard seeds and urad dal
Roast the dried chillies and curry leaves
Add this tempering into the stir fry.
