Put together chicken do pyaza the Persian way

Of Persian origin, Chicken do pyaza is quite easy to make. The Persian name “dopiaza” means two big onions, one chopped finely and the other cut into cubes. The onions are added in two phases. Here’s a quick ‘n easy murg (chicken) do pyaza recipe. Cheers!

Ingredients
½ kg chicken
4 onions
2 tomatoes
1 cup yoghurt
1 tbsp ginger-garlic paste
2 tbsp red chilli powder
1 tbsp cumin powder
1 tbsp coriander powder
2 green chillies
½ tsp garam masala
4 dry red chillies
2 chopped red chillies
Oil
Salt

Preparation
Heat oil in a pan and saute chopped onions
Add a bit of salt and saute till it turns brown
Mix in ginger-garlic paste, chopped tomatoes and chicken
Cover and cook
When it is half cooked, add in the yoghurt, chilli powder, cumin, coriander powder, green chillies and garam masala, cover and cook again
In another pan, saute onion cut into cubes, dry red chillies and chopped red chillies
Mix it with the chicken
Garnish with coriander leaves
Serve sizzling hot chicken do pyaza along with rice
