Nirthi poricha kozhi aka full roast chicken

Who doesn't love roasted chicken cooked to a golden crispy perfection? Nirthi poricha kozhi or full roast chicken is the right recipe you could use for Easter. It is juicy on the inside and crispy outside. Here is the recipe:

Ingredients
Full chicken with skin - within 1.2 kgs (make slits on the chicken)
For the marinade
1 tsp turmeric
1 tsp pepper
1 tbsp garam masala
1 tbsp whole coriander
¼ cup shallots
6 dried red chilli
1 tbsp ginger paste
1 tbsp garlic paste
Lime juice from 1/2 a lime

Preparation
Grind together the masala and marinate the chicken for 2 hours.
Lightly fry the chicken on all sides using a flavourless oil until golden.
Add 2 cups warm water and pressure cook the chicken until done.
Once it€™s cooked, assemble the chicken in a wide dish.
Thicken the gravy left over in the pressure cooker (add a tbsp of maida mixed in cold water, if needed) and pour it over the chicken.
Garnish with fried potato wedges .
