Dosas can be made delicious and exciting by trying out different fillings. Here is a fairly simple recipe of chicken dosa which is a filling meal.

1 big onion (finely chopped)
Small piece of ginger (finely chopped)
2 green chillies (chopped)
2 bunches curry leaves
¼ tsp turmeric powder
½ tsp chilli powder
1 tsp coriander powder
¼ tsp black pepper powder
½ tsp garam masala
1 ½ tbsp coconut oil
Salt as required
4 cloves garlic

Heat coconut oil in a pan
Sauté onions, ginger, green chillies, curry leaves and garlic
Now add turmeric powder, chilli powder, coriander powder, black pepper powder and garam masala
Sauté on low flame until the raw smell of the powders are gone
Add salt as required and some chicken stock as well
Mix well. This mixture should have slightly loose consistency
Heat a dosakallu or tawa
Pour the dosa batter and spread into thin crepe
Sprinkle some fresh ghee
When the dosa begins to get crispy on the edges, place the chicken mixture in the centre
Fold the dosa in half and take it off the tawa
Chicken dosa tastes best when served hot with spicy coconut chutney.
