Valluvanadan cheera curry

Red spinach is packed with protein and iron, besides other essential nutrients. Try out this simple recipe of delicious red spinach curry cooked in the special Valluvanadan style.

Ingredients
1 kg red spinach
50 gm yellow split gram
1 coconut
1 tsp cumin
¼ tsp turmeric powder
1 ½ tsp chilli powder
4 dried chillies
1 tsp mustard seeds
Curry leaves

Preparation
Boil the yellow split gram with some turmeric powder in enough water to soak them
Into it add finely chopped spinach leaves and chilli powder
Grind the coconut and cumin into fine paste
Add this paste into the spinach-gram mixture
Allow this to boil well
Prepare the tempering by spluttering mustard seeds in hot coconut oil
Roast the dried chillies and curry leaves
Add this tempering into the curry and mix well.
