Delicious cauliflower mappas

Everyone knows that cauliflower isn't the most popular vegetable. However, cauliflower mappas is a delicious curry that is loaded with flavours. This dish tastes incredible with white rice, chapathi or roti. Check out the fairly simple recipe of cauliflower mappas.

Ingredients
1 small cauliflower
2 tbsp coconut oil
½ tsp mustard seeds
1 onion (thinly sliced)
½ tsp garlic (chopped)
1 tsp garlic (chopped)
2 green chillies (chopped)
2 bunches curry leaves
2 tsp coriander powder
1 tsp chilli powder
¼ tsp turmeric powder
½ tsp garam masala
Salt as required
1 small tomato (diced)
¼ cup first extract of coconut milk
1 cup second extract of coconut milk
1 tsp vinegar
2 tbsp chopped coriander leaves

Preparation
Separate the cauliflower florets and wash them well
Soak them in warm water for at least 10 minutes
Heat oil in a pan and splutter mustard seeds
Sauté onions, ginger, garlic, green chillies and curry leaves
When they are golden brown add coriander powder, chilli powder, turmeric powder, garam masala and salt as required
Sauté until the raw smell of the powders are gone
Into it add the cauliflower florets and tomatoes
Sauté for 3 minutes
Pour in the second extract of coconut milk
Allow the cauliflower to cook in the coconut milk
Now add the first extract of coconut milk and vinegar
Give everything a good mix
Garnish with chopped coriander leaves.
