Bismi group's Ajmal cooks Kuttanadan duck roast amid lockdown

Like most people who are home quarantined due to the lockdown, Ajmal VA, the managing director of the Ajmal Bismi group too has decided to hone his culinary skills. Usually, the duck meat takes times to cook perfectly. However, the business honcho shares an easy tip to make the duck meat tender. Check out the recipe of special Kuttanadan duck roast.

Ingredients
Duck meat
Salt
Vinegar
Turmeric powder
Chilli powder
Pepper powder
Mustard seeds
Ginger-garlic
Curry leaves
Dried chillies
Coconut shards
Onions (chopped)
Shallots (chopped)
Coriander powder
Garam masala
Pepper powder
Cumin powder
Duck stock
Coconut milk

Preparation
Rub salt and vinegar on the duck pieces and wash them well
Marinate the duck pieces with salt, turmeric powder, chilli powder and pepper powder
Cook the duck pieces until they are nice and tender
Heat oil in a pan and fry these marinated duck pieces
Keep them aside to be used later
Into the same oil add the mustard seeds, ginger and garlic
Sauté
Now add some curry leaves and dried chillies
Add the coconut shards and fry them
Add onions and shallots
Sauté them well
Into it, add coriander powder, chilli powder, garam masala and pepper powder
Mix well
Add the cumin powder and the duck stock as well
Now add the fried duck pieces
Add vinegar as required
Give everything a good mix
When the gravy begins to thicken up add the coconut milk
Cook for some more time and take it off the flame.
