Gujarati-style dal curry

Dal curry, which is extremely delicious and is loaded with essential nutrients, enjoys an undisputed position in the Indian cuisine. Be it rice, roti or chapathi, a bowl of fragrant dal curry is enough to make it a hearty meal. Check out a special Gujarati style recipe of dal curry.

Ingredients
1 ½ cup toor dal/yellow lentils (boiled)
2 green chillies
½ tsp turmeric powder
½ tomato
¼ cup jaggery shavings
1 tsp ginger
½ tsp cumin
1 tsp mustard seeds
4 -5 curry leaves
½ tsp chilli powder
1 inch piece of cinnamon
3 cloves
¼ tsp asafoetida
1 tsp lemon juice
1 tbsp oil
Salt
Coriander leaves

Preparation
Mash the boiled toor dal/yellow lentils nicely
Pour 1 cup water if the dal paste is too thick
Heat a pan over low flame
Transfer the dal mix into it
Into it add turmeric powder, green chillies, jaggery shavings, tomato and ginger
Mix well
Cook for 5 minutes with the lid on
Pour 2 cups water and boil for 10 more minutes
Stir occasionally so that the curry wouldn€™t stick to the bottom of the vessel
Mix the cinnamon stick, cloves, curry leaves and asafoetida
Add these into the dal curry
Add the lemon juice
Give everything a good mix
Garnish with chopped coriander leaves.
