Nutritious curry leaves rice

Curry leaves that are added for fragrance in dishes are storehouses of essential nutrients. However, we do not eat the curry leaves and often pick them out of the dishes. Here is an amazing recipe of a tasty rice dish that has all the goodness of the curry leaves.  

Ingredients
1 cup rice (boiled with salt)
1 cup curry leaves
1 ½ tbsp urad dal
1 tbsp yellow split dal
½ tbsp pepper
½ tbsp cumin
¼ tsp mustard seeds
1 dried chili
Some peanuts
1 cup grated coconut (optional)
3 tbsp oil
Salt as required

Preparation
Dry roast the urad dal, yellow split dal, pepper corns and cumin
Keep them aside
Heat oil in the same pan
Fry the curry leaves
Grind the fried curry leaves with the dry roasted mix
Heat oil and splutter mustard seeds
Roast ½ tbsp yellow split dal and urad dal
Add the dried chilli and peanuts
Add the masala powder and pinch of salt as well
Now add the boiled rice into it
Mix well
Add the grated coconut
Mix well and turn off the flame
