Make this year's Onasadya more nutritious with this special spinach avial. Check out this easy recipe.

Ingredients
¼ kg mixed vegetables (fresh spinach stem and leaves, drum sticks, cucumber, snake beans, egg plant, potato, raw plantain; washed and thinly sliced)
½ tsp chilli powder
½ tsp turmeric powder
1 onion (sliced)
¼ cup raw mango (cut into pieces)
Salt as required
1 cup grated coconut
A pinch of cumin
2 tsp yoghurt
2 sprigs curry leaves
4 tsp coconut oil

Preparation
Cook the vegetables with chilli powder and turmeric powder
Add the green chillies, onion, raw mango and salt when the vegetables are almost done
Cook well
Crush the grated coconut with cumin 
Mix this in yoghurt
Now add the coconut-yoghurt mixture into the cooked vegetables
Mix well
Cook for two more minutes
Add fresh curry leaves and coconut oil
Give everything a good mix.
