Palakkad-special rangayyan

Rangayyan is a tasty dish that is extremely popular in Palakkad. Made with green gram, rangayyan can be had as a side dish with curd rice or as an evening snack.

Ingredients
1 cup green gram
10 shallots (chopped)
1 red chilli
1 tbsp ghee
½ tbsp mustard seeds
2 green chillies
Curry leaves
Salt as required
For the masala
3 Kashmiri chillies
¼ tsp cumin
½ tbsp pepper
1 tbsp coriander seeds
10 shallots
1 small piece cinnamon
1 cardamom
2 cloves
A pinch of fennel seeds

Preparation
Soak the green gram for at least an hour in warm water
Dry roast the Kashmiri chillies, cumin, pepper corns, coriander seeds, cinnamon, cardamom and fennel seeds until they turn brown 
Add shallots into it and sauté for a minute
Add some water into this mix and grind them in a mixer jar
Grind the soaked green gram without adding too much water
Into it add salt and the masala paste as well
Mix well
Transfer the batter into a steel plate
Cook in steam for at least 20 minutes
Cut into pieces after rangayyan has cooled down
Heat ghee in a pan
Roast mustard seeds, red chilli and curry leaves
Now sauté shallots and green chillies
Add the rangayyan pieces into it
Mix for a minute until the pieces are coated well with the tempering.
