Ingredients
5 guavas
1 cup jaggery syrup
2 cups milk
Cardamom powder
Dried ginger powder
½ tsp cumin powder
Cashews
Chopped almonds
Coconut shards
Chopped guava for garnish
2 tbsp ghee
Salt

Preparation
Peel the guava and remove the seeds
Pressure cook the flesh and grind it into pulp
Heat 1 tbsp ghee in an uruli or a thick bottomed vessel
Sauté the guava pulp
Into it add the jaggery syrup
Now add the milk
Mix well and allow it to boil
When bubbles begin to appear, add the cardamom powder, dried ginger powder and cumin powder
Mix well and take it off the flame
Meanwhile, heat 1 tbsp ghee in another pan
Fry the coconut shards and keep them aside
Now fry the cashews and then the guava pieces too
Add these into the payasam
Add the chopped almonds as well
Finally add a pinch of salt to balance the flavours.
