Uppu adai and shallots chutney

Uppu adai is a delicious and healthy dish that can be had as a filling breakfast or an evening snack. It tastes great with spicy shallots chutney. Check out the pretty simple recipe of uppu adai.

Ingredients
1 cup rice flour (250 ml cup)
1 small cup grated coconut
1 small cup boiled red cow peas
2 green chillies
½ tsp mustard seeds
1 tbsp urad dal
¼ tsp asafetida powder
1.5 tbsp sesame oil
Curry leaves
Salt as required
2 cups water

Preparation
Dry roast the rice flour until lighter brown in colour on low flame
Heat sesame oil in a pan and splutter mustard seeds and urad dal
Sauté green chillies and curry leaves
Add the asafetida powder
Pour 2 cups water as well
Now add the boiled red cow peas and grated coconut
Add salt as required
Boil well
Into it add the roasted rice flour
Stir well until it thickens up
Make small balls after the dough has cooled down
Press these balls on your palms to flatten them and put a hole in the middle
Cook in the steamer for at least 15 minutes
Serve hot uppu adai with your regular shallots chutney.
