Omelet curry

Omelet curry is delicious and tastes best with chapathi, roti, or appam. Check out the recipe for omelet curry.

4 eggs
1 small onion
1 green chilli
¼ tsp pepper powder
Salt as required
Oil as required
For the masala
1 onion
1 tsp garlic
¾ tsp ginger
2 green chillies
10 cashews
1 small tomato
¼ tsp turmeric powder
½ tsp coriander powder
½ tsp garam masala
Coriander leaves as required
Salt as required
Oil as required

Break the eggs into a bowl
Add the onion, pepper powder and salt
Beat well
Heat some oil in a pan and make omelet
Cut the omelet into medium sized pieces
Keep the omelets aside to be used later
Heat oil in a pan and sauté onions, ginger, garlic and green chilies
Add the tomatoes and cook well
Add the cashews and roast for 30 seconds until they change colour
Grind this mixture into fine paste
Transfer this masala paste into the pan
Pour 1 cup water as well
Boil the gravy
Turn off the flame and add the omelet pieces
Gently mix the omelet pieces in the gravy
Garnish with chopped coriander leaves
Tastes best when the curry is served hot.
