An exotic version of chicken curry, Chicken Ahuri has all those tasty spices mixed in it to give you a variety of taste.
1kg chicken cut into cubes
1tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp jeera powder
1/2 tsp chilli powder
Salt to taste
1tsp black pepper
2 star Anise
1 stick of cinnamon
2tbsp chopped ginger
2 tbsp chopped garlic
4 green chillies
2 large onions, finely chopped
1 tomato, chopped
Marinate chicken using coriander powder, turmeric powder, jeera powder, chilli powder and salt.
In a pan heat oil.
Add jeera, saunf, black pepper, star anise, cinnamon and sauté for 2-3 minutes
Add chopped ginger, chopped garlic and green chillies and cook for a minute
Add onions and sauté till brown.
Add tomato to this and cook for 5 more minutes.
When this mixture cools down, blend it into a fine paste.
In another pan heat oil, pour jeera, add 1 small sliced onion and cook till brown.
Add the chicken and the ground paste to this mix well.
Adjust the spices and salt.
Cook till the chicken is tender.
Season with mustard seeds and curry leaves.
Garnish with finely sliced ginger and cilantro and serve.
