Gooey unakkalari payasam has the goodness of rice bran and jaggery as well. Here is how you could make it at home.
1 cup unakkalari or rice with bran
1 cup melted jaggery
1 tbsp ghee
½ tsp cardamom powder
Pressure cook the washed unakkalari with 1 cup water until 2 whistles
Heat 1 tbsp ghee in a pan and fry the cashews and raisins
Keep them aside to be used later
Add the cooked rice into the same pan
Mix for 2 minutes
Now add the melted jaggery
Allow this mixture to boil well
Add the grated coconut when the jaggery syrup reduces and the payasam has a sticky consistency
Garnish with cardamom powder and fried cashews and raisins
Sprinkle some crumbled rock candies as well
Tasty and rich unakkalari payasam is ready.
