Chicken bao bun

Steamed bao buns are soft and fluffy wraps with delicious fillings inside. It is a popular street food in most South East Asian countries. Check out the recipe.

Ingredients
For the bun
1 ½ cups all purpose flour
1 tsp yeast
¾ cup lukewarm milk/water
2 tbsp sugar
2 tbsp milk powder (if required)
Salt as required
For the filling
250 gms boneless chicken
¼ tsp chilli flakes
½ tsp chilli powder
½ tsp ginger - garlic paste
1 tbsp soy sauce
1 tsp red chilli sauce
1 tsp vinegar
Salt as required
For the sauce
½ cup mayonnaise
2 tbsp red chilli sauce
Marinate the chicken pieces with these ingredients
For the coating
1 cup all purpose flour
½ tsp oregano/fennel powder
To garnish
1 onion (sliced)
Spring onion

Preparation
Bun
Mix yeast and sugar in milk or water
Keep it aside for at least 10 minutes for the yeast to rise
Take the all purpose flour, milk powder and salt in a bowl
Add the risen yeast mix
Add some butter or oil too
Now mix into soft dough
Keep aside for 1 ½ hours for the dough to rise
After the dough has risen well, knead the dough again
Roll the dough into sheet and cut disks from them using a cutter
Fold these disks and then roll again
Line a baking tray with butter paper
Place the folded bao buns in the tray
Cook in steam in a regular idli steamer for at least 15 minutes
Make sure that the bao buns are steamed on medium flame
Chicken filling
Meanwhile, mix the oregano/fennel powder in the all purpose flour
Coat the marinated chicken pieces in this mix
Fry them in hot oil
Sauce
Mix the red chilli sauce in mayonnaise
Place the chicken filling in the folded bao buns
Spread the sauce
Garnish with onion slices and spring onions
Tasty and soft bao buns are ready!
