This is the perfect recipe if you are busy and still crave for soft and fluffy vattayappam. There is no need to soak the rice or grind grated coconut to make this easy vattayppam. Here is the recipe.
Ingredients
1 cup rice flour
½ cup white flattened rice (washed and soaked for 5 minutes)
½ cup sugar
A pinch of salt
¼ tsp cardamom powder
½ tsp yeast
Cashews and raisins as required
Preparation
Take the rice flour, flattened rice, sugar, salt, cardamom powder and yeast in a mixer jar
Add some water too
Blend well
Transfer the batter into a bowl
Keep the batter aside for 3-4 hours to rise
Pour the batter into a greased vessel
Insert this into a steamer
Cook in steam for 20 minutes
Garnish with cashews and raisins
Enjoy the soft vattayappam as a tasty evening snack.
