Sardines in ginger leaf

Fresh sardines baked in ginger leaf are extremely delicious as the ginger leaf releases its incredible flavours. Check out the simple recipe of sardines in ginger leaf. This dish tastes best with boiled tapioca.

Ingredients
1 kg sardines (cleaned and scored)
2 tbsp chilli powder
1 tbsp black pepper powder
Turmeric powder as required
Salt as required
8 shallots (finely chopped)
7 garlic cloves (finely chopped)
Small piece ginger (finely chopped)
5 green chillies (finely chopped)
Tamarind as required
Ginger leaf as required

Preparation

Into a bowl add chilli powder, black pepper powder, turmeric powder, salt, shallots, ginger, garlic, green chillies and tamarind
Pour some coconut oil and mix it into paste
Marinate the sardines with this masala paste
Spread the ginger leaves on a non stick pan
Place the marinated sardines on the ginger leaves
Add a few curry leaves as well
Cook on low flame with the lid on
Serve hot with boiled tapioca.
