Healthy one-pot dal palak rice

The ultimate Indian comfort food is rice and dal. But how about making a healthy one-pot meal mixing both dal and rice loaded with fresh palak? That will be luscious! Here is an easy and healthy recipe of one-pot dal palak rice.

Ingredients
1 tbsp desi ghee
1tsp cumin seeds
1/2 tsp turmeric powder
1/4 tsp asafoetida powder
A few curry leaves
1 tbsp green chilly sliced
1tbsp ginger crushed
1 tbsp garlic crushed
1 onion roughly chopped
1 tsp salt
1 tomato roughly chopped
1/4 cup spinach/palak chopped
1.5 cup soaked brown rice
1/4 cup each of soaked toor dal, masoor dal and moong dal,
2.5 cups of water
Coriander leaves

Preparation
In a pressure cooker, pour ghee.
Add cumin seeds, turmeric powder, and asafoetida powder. Mix well.
Add few curry leaves, green chilli, crushed ginger and garlic.
Sauté well.
Into this, add onion, salt, tomato and mix well.
Add spinach and sauté in low flame.
Now add ¼ cup each of soaked toor dal, masoor dal and moong dal. Also add 1 1/2 cup soaked brown rice into this and mix thoroughly.
Add 2 ½ cups of water into the cooker.
Squeeze half a lemon.
Add salt if necessary and mix well.
Close the lid and cook on medium flame for 1 whistle.
Open the lid and garnish the rice with coriander leaves.
You can now serve the healthy one-pot dal palak rice.
