Beetroot chutney is colourful, unique and tastes as great as your regular raw mango chutney. Try this very simple recipe of beetroot chutney.
1 beetroot (cut into small pieces)
1 raw mango
7 bird eye chillies
3 small pieces ginger
1 sprig curry leaves
½ cup coconut
Salt as required
Heat coconut oil in a pan
Sauté the beetroot pieces and curry leaves
Allow this to cool down completely
Grind the sautéed beetroot with raw mango, bird eye chillies, shallots, ginger and salt
Add the grated coconut and grind again
Beetroot chutney tastes great with rice or kanji (rice gruel).
