Ingredients
1 kg sweet potatoes
½ kg palm jaggery
4 tbsp ghee

Preparation
Melt the palm jaggery by boiling it with half a cup of water
Strain the syrup and set it aside
Steam the sweet potatoes until soft, cutting them into small pieces to cook evenly
Remove the skin and blend the steamed sweet potatoes in a mixer jar
You can add the cooled palm jaggery syrup while blending
Heat 1 tablespoon of ghee in a thick-bottomed vessel
Pour the blended sweet potato mixture into the vessel and mix well
Cook until the mixture thickens, adding ghee gradually as the halwa cooks
When the halwa begins to separate from the sides of the vessel, transfer it into a greased dish

Sweet potato halwa is best enjoyed hot.
